Jacopo farms three hectares of ancient vineyards in Valsamoggia, a series of hills between Bologna and Modena in Emilia-Romagna. His vines can be up to 100 years old, with more than 20 varieties growing among woods and orchards. Jacopo does everything by hand to maintain this amazing diversity and extensive complex ecosystems. All grapes are harvested, fermented and aged together, continuing the Italian tradition of the field blend. Wines are bottled unfiltered, with no additions.
This fine-bubbled, bone-dry and hazy sparkling features notes of golden fruit and a lick of saline, with an appealingly rugged quality. The grapes were pressed directly and fermented in concrete vats, before being put into bottle with must from the same harvest in traditional Italian col-fondo style. Simply sensational for summery celebrations.
